Crispy Baked Potato Halves

Ingredients:

2 large Russet Potatoes

2 Tbl olive oil

2 Tbl salted butter

Kosher salt

Ground pepper

1 cup grated cheese

2 scallions, sliced

4 Tbl sour cream

 

Directions:

Preheat oven to 425 °. Scrub potatoes clean. Cut lengthwise. Brush both sides with olive oil and sprinkle with salt and pepper.
On parchment paper lay down small pats of butter per potato. Press down each potato half onto the butter.

Bake in preheated oven for 30-40 minutes or until tender and crispy golden brown on the potato’s flesh side. Squeeze potato to loosen and add favorite toppings. Salt, butter, sour cream and cheese.
