Pouding Chomeur

Why is it called Pouder Chomeur? It is a Canadian dessert developed during an economic crisis. It is made with simple cheap ingredients. It is similar to bread pudding. We use this recipe in several of our cooking classes @redstickspice.

Ingredients for the syrup:

1 cup heavy cream

1 cup maple syrup

Directions for syrup

Bring maple syrup and heavy cream to a boil in a saucepan over medium-high heat once mixture starts to bubble, stir, and set aside.

You won’t use all the maple cream sauce on the cake. About half is reserved for serving the cake.

Ingredients for cake:

1.5 sticks of butter, at room temperature

¾ cups white sugar

1 tsp Pure Vanilla Extract

1 tsp Maple Extract

2 eggs, room temperature

1 tsp baking powder

½ tsp salt

1 ¾ cups all-purpose four

Directions:

Preheat oven to 425°. Spray a deep baking dish or 9 “cake pan and place it on a sheet pan.

In a standing mixer with paddle attachment, beat butter and sugar together until creamy and well combined. Whisk in extracts and 1 egg until incorporated. Mix in the other egg. Add baking powder, salt and four.

Transfer batter to prepared pan and pour the maple cream sauce on top, stopping 1 inch from the top. Reserve the remaining sauce for serving the cake.

Bake in the center of the preheated oven until golden brown and a toothpick inserted into the center comes out mostly clean, about 30 minutes. Let cool for 10 minutes. Serve with extra maple-cream sauce and a whipped cream.
