Peach Caprese Salad with Basil Vinagrette


Peaches are everywhere and this is a great way to serve them up! A sweet juicy peach, creamy mozzarella and a punchy vinaigrette made with peach balsamic and fresh basil these flavors hit the mark!


8 ripe peaches

Fresh basil leaves

¼ cup red onion, thinly sliced

12 oz fresh mozzarella, thinly sliced or quartered

3 cups heirloom cherry tomatoes, halved


Fresh Ground Pepper


To assemble the salad, cut the peaches into thick slices (be sure to cut around the pit) Arrange on a large cutting board or platter, alternating with the mozzarella slices, basil leaves, cherry tomatoes and place around the red onion slices

Drizzle the Basil Vinaigrette over assembled salad, Finally, sprinkle on salt and pepper.

 Basil Vinaigrette


1 shallot, roughly chopped

1 cups tightly packed fresh basil leaves, stems removed (about 4 ounces)

1 clove garlic

2 tsp fresh lemon juice

1/2 tsp red pepper flakes

1/2 cup olive oil

2 Tbs White Balsamic Vinegar or Peach Balsamic Vinegar

1 tsp salt


Combine all the ingredients for the basil vinaigrette in a highly powered blender and blend for 60 seconds until very smooth.

Taste and adjust salt and pepper as needed. Serve immediately. Or you can refrigerate the vinaigrette for up to 3-5 days.
