Mexican Street Tacos-Totally Delicious!

I am having more fun teaching these virtual online cooking classes. The people that sign up turn out some seriously good looking food. In the Mexican Street Taco Cooking Class, we learned how to roast dry and fresh chiles, make a killer tomatillo and almond salsa, char the jalapeños and pickle some onions. All these recipes we needed for our Sweet Potato and Chorizo Taco.

We started these recipes first by browning our chorizo. We used same pan that we cooked the chorizo for the sweet potato slices so we could use that tasty fat!

The spicy tomatillo and almond salsa has heat and flavor. The dried chiles are toasted along with the garlic and almonds. Then all of these ingredients are simmered with the tomatillos. After blending it all together in the blender, you add some vinegar for a hit of acid to round it out.

This is how you build this street taco. You start with the sweet potato, chorizo, salsa, charred jalapeños, pickled red onions, feta and top with the corn nuts. You talk about a delicious bite!
